Floating Fruit Parfaits

Floating Fruit Parfaits Ingredients:

  • 1/2 cup sliced strawberries
  • 1 cup plus 6 tbsp. thawed cool whip lite whipped topping, divided
  • 1/2 cup cold water
  • 3/4 cup boiling water
  • 1 pkg. JELL-O brand strawberry flavor sugar free low calorie gelatin
  • 3/4 cup ice cubes
Recipe: Floating Fruit Parfaits

  1. Divide sliced strawberries equally among 6 dessert glasses.
  2. Stir boiling water into dry gelatin mix in medium bowl at least 2 min. until completely dissolved.
  3. Add cold water and ice cubes stir until ice is completely melted.
  4. Remove 3/4 cup of the gelatin and pour evenly over strawberries.
  5. Refrigerate 20 min. or until gelatin is set but not firm.
  6. Add 1 cup of the whipped topping to remaining gelatin.
  7. Stir with wire whisk until well blended. Spoon evenly over gelatin in dessert glasses.
  8. Refrigerate 1 hour or until firm.
  9. Top each parfait with 1 tbsp. of the remaining whipped topping just before serving.
  10. Store remaining parfaits in refrigerator.
