Berry Filled Cinnamon Crepes

Cinnamon Crepes
Ingredients:
- Yields 12
- 1/2 cup flour
- 1/4 tsp salt
- 2 eggs lightly beaten
- 1 cup milk
- 2 tbls Olive Oil
- 1/2 tsp cinnamon
- 1/4 tsp vanilla
Recipe: Cinnamon Crepes
- In mixer whisk flour, salt, eggs, milk, and oil until smooth spray 6" saute pan with PAM and heat over medium high heat.
- Add 2 tbls of batter and swirl around pan quickly, cook 30 seconds until set.
- Using narrow spatula, turn over and cook for 5 seconds.
- Remove and place on wax paper cool to room temp and then stack.
- Wrap in plastic for up to 3 days.
Filling
Ingredients:
- 1/2 cup fresh raspberries
- 1/2 cup fresh blackberries
- 1 cup fresh strawberries, quartered
- 1 tbl Splenda
- 2 Bananas, cut into 1/2" slices
Recipe: Filling
- Combine all ingredients in a sauce pan over medium-low heat.
- Cook 4 minutes. Stir occasionally.
